The 2024 San Salvatore 1988 Vetere Rosato IGP is an elegant Mediterranean rosé from Paestum in Campania, southern Italy. Produced from 100% Aglianico grown in the Cannito vineyards near the ancient temples of Paestum, the grapes undergo six hours of cold maceration followed by gentle pressing to achieve its delicate pale pink colour and refined aromatic character. The wine opens with fragrant aromas of wild strawberry and red berries, layered with wild rose, violet and subtle Mediterranean herbs.
On the palate, it is fresh, delicate and beautifully balanced, with juicy red berry and citrus flavours supported by lively acidity and an attractive saline character. Around six months of maturation in stainless steel preserves its purity and freshness, while the finish brings lingering notes of berries and grapefruit. Despite being made from the powerful Aglianico grape, Vetere shows a remarkably graceful and refreshing side of the variety.

Aglianico gives Vetere beautiful freshness, savoury complexity and enough structure to make it particularly versatile with food. Enjoy well chilled now or over the next 1–2 years. Pair with seafood tartare, grilled prawns, antipasti, buffalo mozzarella, white meats or a classic Pizza Margherita.
