The NV Lethbridge Vin Jaune Yellow is one of the most distinctive and unconventional wines in the Lethbridge portfolio — a true homage to the famous “yellow wines” of France’s Jura. Crafted predominantly from Savagnin grown in Geelong and matured under a veil of flor yeast for extended ageing, it undergoes a slow oxidative process that builds remarkable complexity, texture and savoury depth. The nose is intensely aromatic and unique, revealing notes of walnut, almond and curry spice layered with preserved lemon, dried citrus peel and chamomile. There is a pronounced oxidative character, balanced by lifted citrus and subtle floral elements, giving the wine both intrigue and refinement.
On the palate, it is dry and powerful with a richly textured, almost waxy mouthfeel. Flavours of preserved citrus, spice and nutty complexity are supported by a saline, mineral backbone. The structure is savoury and persistent, with a long, tangy and slightly oxidative finish that continues to evolve in the glass.

At Wine More Cellars, this is a true connoisseur’s wine — highly distinctive and unlike most traditional whites. Inspired by Jura Vin Jaune (a style aged under yeast “flor” to develop nutty, oxidative complexity), it offers a similar profile to fino sherry but without fortification.
Compared to conventional Chardonnay or Sauvignon Blanc, this is far more savoury, textural and complex. Best enjoyed slightly cool rather than cold, and ideally with air (decanting recommended). Drink now and over the next decade+ as it continues to evolve.
Perfect with Comté or aged cheeses, mushroom dishes, roast chicken, saffron-based cuisine or umami-rich dishes.
