SAVAGNIN
Savagnin is the signature white grape variety of France's Jura region and one of the country's oldest indigenous grapes. The more traditional oxidative style is aged under a layer of yeast known as voile, similar to Sherry's flor. This method creates complex flavours of walnut, hazelnut, curry spice, preserved lemon, dried apple, toasted almond, and savoury umami while maintaining striking acidity and freshness.
The most famous expression of Savagnin is Vin Jaune, Jura's legendary yellow wine. Aged for more than six years under voile without topping up, Vin Jaune develops extraordinary concentration and complexity while remaining remarkably vibrant. It is considered one of the world's great long-lived white wines and pairs famously with Comté cheese, mushrooms, poultry, and rich cream-based dishes.
Savagnin is typically fermented with minimal intervention to preserve its distinctive varietal character and terroir.
