The 2025 Domaine Sigalas Assyrtiko is a distinctive dry white from Santorini, Greece, made from 100% Assyrtiko grown on vines more than 60 years old. The nose shows peach, lemon and lime with white blossom and subtle savoury notes, reflecting the character of Santorini’s volcanic soils.
On the palate, it is rich and layered with vibrant acidity, pronounced salinity and a gently textured feel. Whole-bunch pressing, stainless-steel fermentation and at least four months on lees add depth while retaining freshness, leading to a long, dry and mineral-driven finish.
