DOMAINE SIGALAS
Domaine Sigalas is one of the defining estates of Santorini and a producer closely associated with the modern international reputation of Assyrtiko. Based among the ancient vineyards of Oia in northern Santorini, the domaine was founded in 1991 by Paris Sigalas, Christos Markozane and Yiannis Toundas, with Paris Sigalas becoming the driving force behind its viticultural and winemaking philosophy.
Paris Sigalas came from a Santorini family with its own winemaking tradition, although his original academic background was in mathematics. Summers spent harvesting grapes and making family wine gradually developed into a deeper fascination with viticulture and winemaking. He eventually took responsibility for his grandfather's vineyard and developed the guiding philosophy that would define Domaine Sigalas: the “dynamic evolution of tradition.”
The estate's first Santorini wine was produced in 1991. Initially, winemaking took place in the traditional Sigalas family winery before a purpose-built production, maturation and bottling facility was established in Oia in 1998. Today, the winery remains surrounded by vineyards on the ancient plain of Oia and produces approximately 200,000 bottles annually.
Santorini itself is fundamental to understanding Domaine Sigalas. The island possesses one of the world's oldest continuously cultivated vineyard landscapes, with a viticultural history extending back thousands of years. Its extraordinarily dry soils are composed largely of volcanic ash, pumice, lava fragments and sand, with very little organic matter or clay.
These sandy volcanic soils also helped protect Santorini from phylloxera, allowing the island to preserve ancient vines growing on their original roots. Santorini's traditional kouloura training system developed as a response to these demanding conditions. At Domaine Sigalas, Assyrtiko is the undisputed protagonist. The variety accounts for roughly 70% of Santorini's vineyard area and possesses the remarkable ability to retain acidity even under the island's hot, dry Mediterranean conditions. In the volcanic soils of Santorini, it can produce exceptionally structured white wines combining citrus fruit, saline character, mineral intensity and substantial ageing potential.
The classic Domaine Sigalas Santorini Assyrtiko provides one of the clearest introductions to the estate's style. Produced entirely from Assyrtiko and traditionally fermented in temperature-controlled stainless steel, it emphasises purity, natural acidity and the mineral character associated with Santorini's volcanic landscape.
The domaine also explores how Assyrtiko responds to different vineyards and methods of élevage. Santorini Barrel introduces oak fermentation and lees ageing, creating a broader and more textural expression while retaining the natural freshness and structural backbone of the variety.
Kavalieros is among Domaine Sigalas' most important expressions of Assyrtiko. It represents the estate's deeper exploration of vineyard identity and the capacity of Santorini's old vines and volcanic soils to produce serious, age-worthy dry white wine.
Other Assyrtiko-focused wines include EPTA and Nychteri. Nychteri connects Domaine Sigalas with one of Santorini's historic wine traditions, producing a richer, more powerful interpretation of Assyrtiko while retaining the formidable acidity that makes the grape so distinctive.
Although Assyrtiko defines Domaine Sigalas internationally, the estate is equally important for its preservation and exploration of other indigenous varieties of Santorini and the Cyclades. The contemporary range includes Aidani, Athiri, Mavrotragano and Mandilaria, allowing the domaine to present a much broader picture of the island's viticultural heritage.
Aidani provides a softer and more aromatic counterpoint to Assyrtiko and is bottled independently by the estate, while the Aa cuvée combines Assyrtiko with Athiri. These wines demonstrate that Santorini's identity extends beyond a single celebrated grape variety.
Among the reds, Mavrotragano has become particularly significant. Once an endangered Santorini variety found only in small quantities across the island, it was traditionally used in sweet red wines. Producers such as Domaine Sigalas helped demonstrate its potential as a serious dry red variety.
Domaine Sigalas produces a varietal Mavrotragano showing the variety's combination of dark and red fruit, spice, structure and naturally substantial tannins. The estate also produces Mμ, combining Mavrotragano with Mandilaria, while Apiliotis explores the character of Mandilaria in a sweet wine style.
At the opposite end of the spectrum is Vinsanto, Santorini's historic naturally sweet wine. Grapes are dried under the intense Santorini sun before fermentation, concentrating sugar, acidity and flavour. Domaine Sigalas produces its Vinsanto from Assyrtiko and Aidani, creating a deeply concentrated wine in which sweetness is balanced by the remarkable natural acidity of Santorini's grapes.
What makes Domaine Sigalas particularly compelling is the relationship between experimentation and tradition. Paris Sigalas did not seek to modernise Santorini by abandoning its ancient viticulture. Instead, his philosophy was to understand those traditions more precisely and use contemporary knowledge to reveal their potential.
That approach helped establish a new international perception of Santorini wine. Assyrtiko could be more than a refreshing Mediterranean white: in the right vineyards and hands, it could produce profound, mineral and remarkably long-lived wines capable of expressing individual sites and developing beautifully in bottle.
The domaine continues this philosophy through careful vineyard work, sustainable cultivation and experimentation in both vineyard and cellar. Its contemporary portfolio ranges from pure stainless-steel Assyrtiko to barrel-aged and site-focused interpretations, traditional Nychteri and Vinsanto, and increasingly important indigenous varieties such as Mavrotragano and Aidani.
