The 2021 Senses Day One Pinot Noir is a flagship Sonoma Coast Pinot Noir from the Hillcrest Vineyard, the site where Senses produced its very first vintage. Hand-harvested and matured for 10 months in French oak, it showcases the elegance and energy of this cool coastal vineyard. The nose is intensely aromatic with raspberry, Bing cherry and red rose, layered with lavender, cardamom and subtle forest floor notes.
On the palate, it is medium-bodied with silky, fine-grained tannins and vibrant natural acidity. Juicy red berries, floral notes and savoury spice are carried through a long, focused finish with remarkable freshness and finesse. Beautifully balanced in its youth, it has the structure to develop gracefully over the next 12–15 years.
