Crafted by Stef Yim from bush vines over 70 years old rooted in volcanic ash and sand, the wine is naturally fermented with indigenous yeasts before maturing for 19 months in amphorae, preserving the purity and energy of this remarkable site. The nose is hauntingly aromatic, revealing wild raspberry, mountain strawberry and rose petals layered with wild mint, wet stone, forest mushrooms and delicate volcanic smoke, creating a wine of exceptional finesse and unmistakable sense of place.
