Wild yeast fermented, left on skins for three weeks and matured for 10 months in seasoned French oak, the wine is bottled unfined and unfiltered to preserve its character. The nose is expressive, revealing aromas of blackberry, dark plum and black cherry, complemented by cracked pepper, subtle apricot kernel, violet and gentle spice.
