Crafted with Pascal Agrapart’s meticulous terroir-focused approach, the wine is fermented in older oak, aged extensively on lees and bottled with low dosage, allowing the chalky Grand Cru character of Avize to remain at the forefront.
On the palate, it is light to medium-bodied with exceptionally fine mousse, vibrant acidity and a tightly wound mineral core. Layers of lemon zest, citrus oil and orchard fruit are balanced by chalk, white pepper, toasted almond and subtle floral complexity, finishing saline, precise and beautifully persistent with remarkable energy and texture. The inclusion of rare heritage Champagne varieties adds additional aromatic detail and savoury complexity without overshadowing the wine’s purity and finesse.
