The NV Nadeson Collis Inception is a sophisticated and highly distinctive Australian sparkling wine from Ray Nadeson and Maree Collis, crafted from cool-climate fruit grown in Drumborg, Henty. Inspired by the richer grower Champagnes of the Côte des Bar, this wine combines predominantly Chardonnay with a small portion of Pinot Noir, Pinot Gris and Meunier drawn from a 20-year-old perpetual reserve blend, creating remarkable complexity and depth. The nose is layered and vinous, revealing lemon zest, green apple and white peach alongside oyster shell, sea spray and chalky mineral notes. There are evolved, savoury elements of honey on toast, cashew and almond, with subtle oxidative nuances adding intrigue and a distinctly Champagne-inspired character.
On the palate, it is medium to full-bodied with a creamy yet energetic mousse and vibrant natural acidity. Citrus and orchard fruit flavours are supported by nutty, saline and lightly brioche-like complexity from barrel fermentation and extended lees ageing. Despite its richness and texture, the wine remains dry and focused, with a chalky mineral backbone leading to a long, savoury and persistent finish.
Ben’s Recommendation:
At Wine More Cellars, this is one of the most exciting grower-style sparkling wines being made in Australia — complex, vinous and unmistakably handcrafted. Compared to many mainstream sparkling wines, it offers significantly more texture, savoury depth and individuality, sitting stylistically closer to artisanal Champagne than simple fruit-driven fizz. The perpetual reserve system adds incredible layering and complexity, while the low dosage keeps the wine focused and mineral. Enjoy now or cellar through 2032+ as it develops further nutty, brioche-like complexity. Exceptional with oysters, lobster, fried chicken, aged cheeses or richer seafood dishes.
