Louis Bouillot Perle de Vigne Grande Réserve Brut is a classic Crémant de Bourgogne produced in Burgundy using the traditional method, with the secondary fermentation taking place in bottle just as it does in Champagne. Louis Bouillot was founded in Nuits-Saint-Georges in 1877 and has specialised in sparkling Burgundy for well over a century, making Crémant the core identity of the house rather than simply a secondary product. Perle de Vigne brings together Burgundy's four traditional varieties - Pinot Noir, Chardonnay, Gamay and Aligoté - combining the red-fruit character of Pinot Noir and Gamay with the citrus freshness and acidity of Chardonnay and Aligoté. Importantly, the current producer specification states that the wine spends 24 months ageing on lees, considerably longer than the basic appellation requirement, adding texture and subtle autolytic complexity.
