On the palate, it is lively and fresh, with vibrant fruit, sherbet-like acidity and a long, dry finish. Fruit was harvested across three separate picks to balance acidity and ripeness, then cool-fermented in stainless steel. Time on fine lees with stirring adds subtle texture while maintaining freshness.
