The 2025 Bindi Kostas Rind Chardonnay is a finely composed single-vineyard Chardonnay from Victoria’s Macedon Ranges, produced from vines planted in 1988 on volcanic soils over clay. Fragrant notes of orange blossom, white nectarine, lemon and citrus peel are layered with subtle spice, chalky minerality and delicate nuttiness. Wild fermentation and ten months on lees in French oak, approximately 25% new, contribute savoury depth without overwhelming the purity of the fruit.
On the palate, it is focused, vibrant and beautifully textured, combining ripe stone fruit and citrus with creamy lees-derived complexity. Precise acidity gives the wine drive and tension, while restrained oak and mineral notes carry through a long, elegant finish.
Ben’s Recommendation:
At Wine More Cellars, this is an excellent choice for those who enjoy refined, mineral-driven Australian Chardonnay with the precision and structure to develop beautifully in bottle. Enjoy young after decanting or cellar for 8–12 years to reveal greater richness and complexity. Ideal with roasted chicken, grilled fish, lobster, scallops, pork, creamy mushroom dishes or aged Gruyère.
