The 2025 Bindi Dixon Pinot Noir is an elegant and age-worthy expression from Victoria’s Macedon Ranges, produced from sections of Bindi’s original 1988 Pinot Noir planting and the Kaye vineyard planted in 2001. Seductive aromas of red and black cherry, red and dark plum, rose petals, ginger and earth are joined by an increasingly fragrant red berry lift as the wine opens.
On the palate, it is smooth and harmonious, with juicy cherry and plum fruit carried by bright acidity and fine, gently grippy chalk-like tannins. Fermentation with wild yeast and maturation for ten months in small French oak barrels—approximately 20% new—add subtle spice and texture, leading to a beautifully balanced and persistent finish.

At Wine More Cellars, this is an excellent introduction to Bindi’s refined Pinot Noir style, combining perfumed fruit, savoury complexity and serious cellaring potential. Decant if enjoying young, or cellar for around four years to reveal greater complexity; it should then drink beautifully for at least another six years. Ideal with roast duck, lamb, mushroom dishes, roast chicken, grilled salmon or pork.
