The 2024 Bondar Hope Springs Eternal Chardonnay is the inaugural Chardonnay in Bondar's premium Hope Springs Eternal range, sourced from the high-altitude Bowyer Ridge Vineyard in Lobethal, Adelaide Hills. Crafted with a minimalist approach, it highlights cool-climate purity, precision and structure. The nose reveals aromas of lemon, white peach and green pear, complemented by hints of nectarine, toasted hazelnut, subtle oak spice and fine mineral notes.
On the palate, it is beautifully focused with bright natural acidity and a finely textured mouthfeel. Flavours of citrus, orchard fruit and stone fruit are layered with gentle creaminess, delicate nuttiness and a chalky mineral edge, leading to a long, elegant finish. Matured in French oak barriques with full malolactic fermentation, the wine balances richness with freshness and impressive cellaring potential.
