On the palate, it is dry and energetic, with vibrant acidity giving definition to citrus and orchard fruit flavours. Savagnin’s naturally savoury personality brings additional notes of herbs, nuts and gentle earthiness, while the finish is persistent, fresh and mineral. Amélie Guillot works on a small scale in Molamboz near Arbois, with careful manual harvesting and minimal intervention in the cellar.
