Its rich fruit, firm structure and savoury character make it a superb match for slow-braised beef, lamb shanks, wild boar ragù, venison and aged Pecorino or Parmigiano Reggiano. Decant if enjoying now, or cellar confidently through 2045+ as it develops extraordinary tertiary complexity and refinement.
