The Gautherin family traces its viticultural history in the region back for centuries, while the domaine in its modern form was developed by Raoul Gautherin during the late 1950s. Raoul built upon the work of previous generations and established the foundations of the estate known today as Domaine Raoul Gautherin & Fils.

The next generation was represented by Alain Gautherin, who studied oenology before succeeding his father. Alain expanded and refined the domaine while preserving a traditional approach centred on Chardonnay, careful vineyard work and transparent expression of Chablis terroir.

Today, Adrien Gautherin works alongside his father Alain, continuing the family's progression into another generation. Adrien officially joined the family business in 2008, bringing his own viticultural and oenological perspective while maintaining the fundamental philosophy established by his father and grandfather.

An important part of Adrien's development came through experience outside Burgundy. In 2010, he spent several months working at Clos Pepe in California, an experience that encouraged him to introduce new ideas without abandoning the traditions of his family's domaine. This balance between continuity and gradual evolution has become central to the contemporary identity of Raoul Gautherin & Fils.

The domaine works approximately 16–17 hectares of vineyards, with the majority situated around Chablis itself. Chardonnay is the sole focus, allowing the family to explore how a single grape variety responds to different exposures, elevations and geological variations throughout the appellation.

Chablis lies in northern Burgundy, considerably closer to Champagne than to many of Burgundy's famous Côte d'Or vineyards. Its cool continental climate helps Chardonnay retain the high natural acidity and restrained fruit profile that have made Chablis one of the world's most distinctive expressions of the variety.

Equally important is the region's celebrated Kimmeridgian limestone and marl, formed from ancient marine sediments and famously containing fossilised oyster shells. Combined with Chablis' cool climate, these soils contribute to wines renowned for their tension, citrus character, chalky texture and distinctive mineral personality.

The domaine's principal Chablis provides a classical introduction to the house style. Different vineyard parcels are generally vinified separately before blending, allowing the family to adapt pressing, oxygen exposure and lees handling according to the character of each site.

Alongside the regular Chablis is a Chablis Vieilles Vignes, produced from selected older vines. This cuvée brings additional depth and texture while preserving the freshness and mineral structure fundamental to Chablis. Mature vines provide concentration naturally rather than relying on excessive extraction or cellar manipulation.

The domaine becomes particularly compelling at Premier Cru level. Its holdings include celebrated climats such as Vaillons, Montmains, Les Lys and Mont de Milieu, providing expressions from both sides of the Serein River.

Vaillons is one of the classic Premier Cru vineyards on the left bank of the Serein and traditionally produces beautifully balanced Chablis combining citrus fruit, floral notes and mineral freshness. The Gautherin family also works with old vines in this sector, allowing greater depth without sacrificing the site's characteristic energy.

Montmains, another important left-bank Premier Cru, is typically associated with a cooler, more linear expression of Chardonnay. Its wines can show considerable tension in youth and reward bottle ageing as their mineral structure develops greater complexity.

On the opposite side of the river, Mont de Milieu enjoys an excellent exposure and can produce a broader, more concentrated style. In the hands of the Gautherin family, however, the emphasis remains on freshness and energy rather than excessive richness.

At the summit of the domaine are three remarkable Chablis Grand Cru holdings: Vaudésir, Les Clos and Grenouilles. These vineyards sit among the seven officially recognised Chablis Grand Crus on the slopes overlooking the town from the right bank of the Serein.

Vaudésir is celebrated for its combination of richness and elegance. Its varied exposures and sheltered position can produce Chardonnay of impressive aromatic complexity, texture and longevity while retaining the mineral tension expected of Grand Cru Chablis.

Les Clos is the largest of the Chablis Grand Crus and one of the appellation's most famous vineyards. Its wines are renowned for their power, structure and ability to age, often requiring several years in bottle before revealing their full complexity.

Grenouilles is considerably smaller and among the rarest of the Chablis Grand Crus. Domaine Raoul Gautherin & Fils has produced particularly serious examples from this climat, with extended élevage allowing the wine's natural concentration and mineral structure to develop slowly.

One of the defining characteristics of the Gautherin approach is a preference for restrained cellar intervention. The family does not attempt to impose an identical winemaking recipe on every vineyard or vintage. Instead, decisions are adapted according to fruit quality, maturity, acidity and the conditions of each growing season.

Stainless steel remains particularly important throughout the range. Many wines are fermented and matured primarily or entirely in tank, protecting freshness and allowing Chardonnay and terroir to remain at the centre of the finished wine.

Oak is used selectively rather than as a dominant stylistic signature. Older barrels and larger formats may be introduced where additional texture or maturation is beneficial, but the domaine generally avoids making new oak flavour a defining characteristic of its Chablis.

Extended ageing on the lees is another important element of the style. Rather than relying on heavy bâtonnage to create richness, the wines can remain quietly in contact with their lees for extended periods, gradually developing texture and complexity while preserving their underlying precision.

Adrien has also placed increasing emphasis on vineyard health. His philosophy begins with the simple principle that great wine requires great grapes, meaning that much of the work determining quality takes place before the fruit reaches the cellar.

This includes adapting vineyard work to the requirements of individual parcels rather than treating every site identically. Some of the domaine's Grand Cru vineyards have even been worked with horses, reducing soil compaction and reflecting the family's growing attention to soil structure and long-term vineyard health.

The result is a style that successfully combines traditional Chablis character with thoughtful modern precision. These are not wines designed around obvious oak, excessive ripeness or winemaking signatures. Their identity comes instead from Chardonnay, limestone soils, natural acidity and the differences between individual climats.

At village level, the wines offer the citrus, floral and mineral qualities associated with classical Chablis. Premier Cru bottlings introduce greater vineyard definition and complexity, while the Grand Crus provide additional concentration, depth and the capacity for extended cellar ageing.

For collectors, Domaine Raoul Gautherin & Fils is particularly interesting because its range provides access to several of Chablis' most important terroirs under a single family domaine. Comparing Vaillons with Mont de Milieu, or Vaudésir with Les Clos and Grenouilles, reveals just how differently Chardonnay can express itself within a relatively compact vineyard region.
