Sullivans Cove Double Cask is a small-batch Tasmanian single malt whisky created by marrying carefully selected American and French oak casks. Each release is composed by taste rather than a fixed formula, giving the whisky a rich yet balanced house style. The current DC124 release combines whiskies aged between seven and twelve years and is bottled at 47.7% ABV in a 700ml format.
The nose is broad and inviting, revealing dried banana, pear and pineapple alongside brown sugar, salted macadamia, cooking butter and lemon sherbet. The palate is full-bodied and syrupy, with cherry, plum, blood orange and fig flowing into raspberry jam, liquorice, condensed milk, caramel and gentle oak. A long, textural finish brings dates, walnuts, apricot crumble, cocoa, honey and butterscotch, lifted by mint and Earl Grey tea.

At Wine More Cellars, this is an excellent introduction to Sullivans Cove and the depth of premium Tasmanian single malt whisky. Enjoy neat in a Glencairn glass and allow it to rest for 10–15 minutes; a few drops of water can reveal additional fruit and herbal notes. Ideal after dinner or alongside crème caramel, fruit cake, toasted nuts, dark chocolate or mature cheddar.
