The 2025 Patrick Sullivan Bull Swamp Chardonnay is a powerful, site-driven Gippsland Chardonnay from the Bull Swamp Vineyard on the edge of Warragul. Planted in 1982, the dry-grown P58 Chardonnay vines occupy a north-facing section of deep volcanic soils. The nose shows lime, grapefruit and white peach alongside hazelnut, subtle spice, vanilla and lightly toasted notes.
On the palate, it is concentrated and textural with bright acidity providing freshness and drive. Citrus and stone fruit are complemented by a pronounced saline, mineral character and finely integrated oak. The fruit was whole-cluster crushed and fermented in French oak barriques with 30% new oak, followed by full malolactic fermentation and ten months maturation in barrel.
