The 2025 Dormilona Chardonnay is a distinctive Margaret River Chardonnay from winemaker Jo Perry, made with a minimal-intervention approach. Fruit is sourced from the Burnside vineyard and hand harvested, giving a bright expression of Chardonnay with peach, citrus and crisp pear, complemented by savoury, gently nutty notes and subtle mineral character.
The grapes are whole-bunch pressed into a combination of large-format oak and amphora, where natural fermentation and malolactic fermentation take place. This approach builds texture and complexity while keeping the fruit fresh and energetic, resulting in a Chardonnay with vibrant acidity and a savoury, textural finish.
