The 2026 Dormilona Chenin Blanc is a vibrant, organically farmed white from Yungarra Estate in Yallingup, Margaret River, where north-facing vines grow over a gravelly limestone base. The site’s unique lyre training provides filtered sunlight through the canopy, helping the fruit develop flavour while retaining freshness. The warm season produced naturally concentrated fruit, and whole-bunch pressing into amphora, French oak puncheon and seasoned barrels gives the wine a combination of purity, texture and subtle savoury complexity.
On the palate, it is light to medium-bodied and beautifully textured, with lively natural acidity supporting layers of lemon zest, green apple, pear and white peach. Subtle chamomile, white flowers and gentle honeyed notes add aromatic depth, while fine mineral and saline characters provide freshness and length. Three months of bâtonnage contribute a soft, rounded texture without making the wine feel heavy, allowing the bright fruit and natural acidity to remain at the centre. The finish is dry, clean and persistent, with lingering citrus, orchard fruit and delicate savoury notes.
Ben’s Recommendation:
At Wine More Cellars, this is an excellent choice for Chenin Blanc drinkers who enjoy fresh, textural Australian whites with natural acidity and subtle savoury complexity. It is approachable in its youth but has enough texture and acidity to develop further character with short-term cellaring. Best enjoyed over the next 3–5 years. Serve chilled with oysters, grilled prawns with lemon and herbs, seared scallops, roast chicken with tarragon, goat’s cheese tart, or mushroom and leek risotto.
