The 2023 Patrick Sullivan Baw Baw Chardonnay is a site-driven Gippsland Chardonnay sourced from the younger, approximately 25-year-old vines at the Bull Swamp Vineyard. This south-facing section benefits from moderate airflow and exposure, producing fruit with depth and mineral character. The nose shows candied lime, green apple and citrus blossom alongside toasted brioche, hazelnut and subtle preserved lemon notes.
On the palate, it is medium-bodied and concentrated, balancing ripe citrus and orchard fruit with fresh acidity and a saline, crushed-rock character. Whole clusters were crushed before fermentation in French oak barriques, with 30% new oak, followed by full malolactic fermentation and lees stirring for additional texture and complexity.
