The 2023 Louis Michel Chablis Premier Cru Vaulorent is a refined Chardonnay from a prized right-bank site adjoining the Grand Cru slope. Grown on Kimmeridgian soils rich in white marl and fossilised oysters, it shows yellow apple, pear and peach with lemon zest, white flowers and subtle mineral notes.
On the palate, it is medium-to-full bodied with vibrant acidity and a generous, finely textured core of fruit. Citrus and orchard fruit are balanced by chalky minerality and a long, lemon-tinged finish. Fermentation with indigenous yeasts and maturation entirely in stainless steel preserve the purity and definition of the vineyard.
Ben’s Recommendation:
At Wine More Cellars, this is a great choice for Chablis drinkers who enjoy concentrated Chardonnay with bright acidity, mineral structure and no oak influence. Enjoy with oysters, scallops, grilled snapper, roast chicken or creamy seafood dishes, or cellar for further development over the next 5–15 years.
