Woodsy spice and subtle mineral character add complexity, while vibrant acidity keeps the wine fresh and energetic. The combination of fragrant fruit, fine tannins and cool-climate freshness gives this Pinot Noir both elegance and depth.
On the palate, it is medium to full-bodied without feeling heavy, with fine-grained tannins, bright raspberry-driven acidity and layers of dark cherry, red berries and subtle citrus. Forest-floor, herbal and woodsy spice notes add savoury detail through the mid-palate, while restrained oak contributes gentle structure and texture. The wine is youthful and concentrated, but its balance and fine tannins give it excellent length and the potential to develop additional complexity in bottle. At Wine More Cellars, this is an excellent choice for Pinot Noir drinkers who enjoy structured Mornington Peninsula wines with aromatic detail, vibrant acidity and refined tannins. It is enjoyable now but will reward several years of cellaring as the fruit, spice and savoury characters become more integrated. Best enjoyed over the next 5–8 years. Pair with roast duck and cherry jus, roast quail with mushrooms, pork tenderloin with fennel and apple, wild mushroom risotto, or grilled salmon with beetroot and fresh herbs.
