The 2023 Dormilona Clayface Shiraz is a distinctive Margaret River Shiraz made from organically grown fruit from Dormilona’s Yungarra vineyard. The nose shows Satsuma plum, redcurrant and dark berries alongside black olive, warm earth, pepper and savoury spice.
On the palate, it is medium-bodied with fresh acidity, fine sandy tannins and a supple, savoury texture. The hand-harvested fruit is naturally fermented on skins for three weeks in amphora, then basket pressed back to amphora for maturation, preserving freshness and spice without oak influence.
