The 2021 Sato La Ferme de Sato Le Chant du Vent Chardonnay is an estate-grown Central Otago Chardonnay from Yoshiaki and Kyoko Sato’s vineyard near Mt Pisa. The nose is layered with mandarin, quince and apple peel alongside almond, ginger and subtle savoury notes, combining ripe fruit with a distinctive mineral character.
On the palate, it is medium to full-bodied with crisp acidity and generous texture. Natural fermentation and maturation in older French oak preserve freshness while adding depth, leading to a zesty, savoury and persistent finish.
