The 2023 Sato Bannockburn Pinot Noir is a finely detailed Central Otago Pinot Noir sourced from the organically farmed Domain Road Vineyard in Bannockburn. The nose is fragrant and savoury, showing dried strawberry, red cherry and raspberry alongside green tea, woodland herbs and earthy mushroom notes.
On the palate, it is medium-bodied with bright acidity and soft, finely textured tannins. The fruit was hand-picked, naturally fermented with 10% whole bunches and matured for 12 months in French oak, with only 15% new oak, giving the wine gentle structure while preserving its fresh Pinot Noir character.
