The 2021 Domaine Pavelot Savigny-lès-Beaune Blanc is a beautifully refined white Burgundy that highlights the understated elegance and mineral precision of one of the Côte de Beaune’s hidden gems. Produced by the highly regarded Domaine Jean-Marc et Hugues Pavelot, this Chardonnay comes from two estate parcels - Les Planchots and Les Vermots - combining sandy soils with limestone-rich slopes to create a wine of both generosity and tension. Fermented with indigenous yeasts and matured for around 10 months in French oak barrels (approximately 20–25% new), the 2021 vintage reflects the cooler growing season with exceptional freshness, purity and terroir expression.
The nose is bright and beautifully expressive, revealing aromas of lemon zest, grapefruit and white peach layered with jasmine, white tea and citrus blossom. As the wine opens, notes of toasted hazelnut, almond cream and wet stone emerge, complemented by hints of flint, fresh brioche and subtle oak spice. The aromatic profile is remarkably elegant, balancing cool-climate citrus freshness with the gentle richness that defines fine white Burgundy.
On the palate, it is medium-bodied with a silky texture, vibrant natural acidity and impressive mineral precision. Layers of citrus, green apple, pear and white stone fruits are supported by delicate lees-derived richness and beautifully integrated oak. The cooler 2021 vintage has produced a Chardonnay with remarkable energy and focus, while the limestone soils contribute a chalky mineral backbone that carries through the palate. The finish is long, refined and persistent, leaving lingering notes of lemon peel, toasted almonds, oyster shell and crushed limestone. The style is elegant, linear and distinctly Burgundian, favouring finesse and purity over richness.
