2017 William Fèvre Chablis 1er Cru Vaillons is the more open, floral counterpart to Montmains. Expect white flowers and elderflower, ripe citrus, pear and stone-fruit flavours, with ocean-breeze salinity and a light flinty note. The palate is bright but rounded, combining crisp acidity with a supple, approachable texture and a long mineral finish.At nine years, it should be drinking beautifully now: look for developed hints of honey, dried flowers and hazelnut alongside the citrus and chalk.
