The 2022 Croix & Courbet Côtes du Jura Savadonnay is a beautifully layered and mineral-driven Jura white from the exciting collaboration between Burgundian winemaker David Croix and Jura native Damien Courbet. The cuvée blends roughly 70% Chardonnay with 30% Savagnin from multiple organically farmed vineyards around Château-Chalon and the Côtes du Jura, planted on limestone scree, clay and grey marl soils. Vinified ouillé (topped up) to preserve freshness rather than oxidative character, the wine is fermented and aged in older barrels with a tiny portion of Chardonnay matured sous voile, adding subtle nutty complexity beneath the wine’s vibrant fruit and mineral profile.
The nose reveals preserved lemon, quince and green apple layered alongside fennel, almond and wet stone minerality, giving the wine remarkable aromatic lift and Jura character.
