The 2025 Pio Cesare Gavi DOCG is a classic Piedmont white made from 100% Cortese, sourced from selected hillside vineyards across the Gavi area. On the palate, it is dry and lively with crisp citrus acidity, juicy pear and white peach supported by a fine saline mineral note. Cool fermentation and maturation on fine lees in stainless steel preserve freshness while adding a smooth, gently rounded texture. The finish is clean, persistent and savoury, with no oak influence masking the purity of the Cortese fruit.
