The Nadeson Collis Coda NV is a remarkable multi-vintage Brut Nature sparkling wine from Henty, Victoria, crafted from a perpetual blend that began in 2003. Predominantly Chardonnay, with small amounts of Pinot Noir, Pinot Meunier and Pinot Gris, the wine is whole-bunch pressed, naturally fermented in barriques and foudre, and matured in a solera-style system before spending 24 months on lees in bottle. Disgorged with zero dosage, it opens with complex aromas of brioche, toasted hazelnut, dried citrus, oyster shell and sea spray.
On the palate, it is full-bodied and richly textured, balanced by vibrant acidity and exceptionally fine bubbles. Layers of baked apple, preserved lemon, roasted nuts and sourdough are complemented by a saline mineral edge, leading to a long, dry and savoury finish. The perpetual blend and extended ageing create a sparkling wine of remarkable depth while maintaining freshness and precision.
Ben's Recommendation: At Wine More Cellars, this is an outstanding choice for lovers of grower-style sparkling wines seeking complexity and individuality. Serve in a white wine glass alongside oysters, lobster, roasted poultry, Comté or aged hard cheeses to appreciate its layered character. Drinking beautifully now, it will continue to evolve gracefully over the next8–12 years.
