The 2023 Louis Michel Chablis Butteaux Vieilles Vignes is a concentrated Premier Cru Chardonnay from old vines planted in 1955 on the left bank of Chablis. Grown on limestone-rich Kimmeridgian soils, it shows pear, green apple and citrus with acacia blossom, anise and chalky mineral notes.
On the palate, it is medium-to-full bodied with vibrant acidity, concentrated orchard fruit and a pronounced saline, mineral character. Indigenous-yeast fermentation and 20–24 months of maturation entirely in stainless steel preserve the vineyard expression without oak influence. The finish is long, zesty and finely structured.
