2023 Domaine Jean Dauvissat Chablis Bas de Fourchaume is a beautifully expressive Chardonnay from Chablis. This cuvée comes from a small 0.57-hectare parcel located directly below the famous Fourchaume Premier Cru slope, benefiting from the same south-southwest exposure and rich clay-limestone soils that give the wine depth and minerality.
The vines average around 35 years old, and the grapes are hand-harvested before fermentation with indigenous yeasts. The wine is raised primarily in stainless steel to preserve freshness and terroir expression.
Ben’s Recommendation:
At Wine More Cellars, this is the type of Chablis we love recommending because it offers Premier Cru character without the Premier Cru price. The Bas de Fourchaume site delivers extra richness and structure while still keeping the classic Chablis freshness. It pairs beautifully with oysters, scallops, grilled fish, sushi or goat cheese, and will drink beautifully over the next 3–5 years.
