The 2025 Dormilona Clayface Chardonnay is a wild, amphora-aged Chardonnay from Jo Perry’s Clayface range, sourced from organically farmed Margaret River fruit and made with a minimal-intervention approach. Naturally fermented and matured in clay amphora, the wine focuses on texture, savoury complexity and purity rather than oak richness. The nose shows white peach, grapefruit and preserved lemon alongside almond, oatmeal, chamomile and subtle flinty notes. There’s a gently earthy, saline character that gives the wine plenty of individuality and depth.
On the palate, it is medium-bodied with juicy citrus fruit, creamy texture and vibrant natural acidity. Fresh and savoury rather than overtly rich, with amphora ageing adding a fine chalky grip and mineral tension through the long finish.

The 2025 Dormilona Clayface Chardonnay is a beautifully distinctive modern Chardonnay — somewhere between textured white Burgundy and lo-fi Margaret River energy. More savoury, mineral and adventurous than traditional oak-driven Chardonnay styles while still remaining highly drinkable. Excellent with roast chicken, seafood, mushroom dishes or creamy pasta. Drink now or cellar through 2033+.
