The fruit was transported to Clément Lavallée’s cellar in northern Burgundy for vinification, creating a distinctive meeting of Mediterranean fruit and Burgundian winemaking. It shows ripe blackberry and dark plum alongside dried herbs, pepper, earth and subtle balsamic notes.
On the palate, it is concentrated and expressive, with dark fruit, savoury spice and structured tannins balanced by impressive freshness. The Mourvèdre brings depth and earthy complexity, while the wine retains energy and definition through the finish. Salettes forms part of Lavallée’s small-production Éphémère series, created from grapes sourced from winemaking friends outside his usual Burgundy vineyards.
