The Castagna Aqua Santa NV is a unique fortified dessert wine from Beechworth, Victoria, crafted by Castagna Vineyard from Viognier grown on its certified biodynamic estate. Produced as a non-vintage blend of five vintages, the grapes are harvested, naturally dried and inspired by the traditions of Vin Santo, Jerez and Alsace. The result is a beautifully complex wine with aromas of dried apricot, candied orange peel, marmalade, honey and roasted nuts, layered with hints of vanilla and warm spice.
On the palate, it is luscious yet beautifully balanced, with around 100g/L of residual sugar lifted by vibrant natural acidity. Rich flavours of dried mango, candied pineapple,orange marmalade, vanilla and coffee unfold across a silky, textural palate, finishing long with nutty complexity and remarkable freshness. Its carefully crafted balance between sweetness and acidity gives the wine both elegance and impressive length.
