The 2026 The Pawn El Desperado Pinot Noir is a vibrant Adelaide Hills Pinot Noir crafted by The Pawn Wine Co. from a blend of six Pinot Noir clones grown in some of the region's coolest vineyard sites. Wild fermentation, partial whole-bunch inclusion and maturation in French oak puncheons create a wine with freshness, texture and complexity. The nose is lifted with aromas of black cherry, cranberry and raspberry, layered with rose petals, sweet spice and subtle earthy notes.
On the palate, it is medium-bodied with silky tannins and bright natural acidity. Juicy flavours of black cherry, cranberry and mulberry are complemented by hints of balsamic, dried herbs and savoury earthiness, leading to a long, dry finish with excellent balance and finesse. The combination of multiple Pinot Noir clones adds depth while preserving the wine's vibrant cool-climate character.
