The 2023 Holyman Project X Pinot Noir is a limited-release Tasmanian Pinot Noir that showcases a more experimental and small-batch side of the Holyman range. Sourced from premium Tamar Valley fruit, it offers lifted aromas of red cherry, wild strawberry and raspberry, layered with hints of rose petal, whole-bunch spice, dried herbs and subtle earthy notes. The Project X label allows for a more exploratory approach to winemaking while maintaining the elegance and regional character for which Holyman is known.
On the palate, it is medium-bodied with fine tannins, bright natural acidity and a silky, detailed texture. Flavours of red berries, cranberry and dark cherry are complemented by savoury spice and gentle forest floor complexity, creating a wine that is both vibrant and nuanced. Careful oak handling and minimal intervention preserve fruit purity, leading to a long, fresh finish with impressive balance and persistence.
Ben's Recommendation: At Wine More Cellars, this is a fantastic Pinot Noir for those who enjoy small-batch Tasmanian wines with plenty of character and finesse. Drinking beautifully now, it will continue to develop additional complexity over the next 5–8 years. Pair with roast duck, grilled salmon, mushroom risotto, charcuterie or herb-roasted chicken for a classic cool-climate Pinot Noir experience.
