The 2022 Wilfred Shiraz is a generous yet finely structured Shiraz from the Willunga Foothills of McLaren Vale, South Australia. Sourced from organically grown estate fruit on clay loam soils, it shows dark cherry, blackberry and plum alongside violet, cracked pepper and savoury spice.
On the palate, it is medium to full-bodied with generous dark fruit balanced by bright acidity and structured tannins. Layers of liquorice and cocoa add depth, while the savoury oak influence provides additional complexity. The fruit was destemmed with a significant proportion retained as whole berries, followed by indigenous yeast fermentation in open-top fermenters and maturation in seasoned oak.
