The 2022 Domaine Clément Lavallée Chablis 45° is a distinctive Chardonnay from Chablis in northern Burgundy. Grown on classic Kimmeridgian soils, it shows fresh green apple and citrus alongside white flowers, subtle flint and chalky mineral notes. The cuvée takes its name from the steep inclination of the vineyard parcel.
On the palate, it is dry, vibrant and finely textured, with refreshing acidity giving definition to citrus and orchard fruit. Fermentation takes place in 450-litre oak barrels, followed by around 18 months of maturation in the same vessels. The extended élevage adds depth and texture while maintaining Chablis' characteristic freshness, finishing long, saline and mineral.
