The Les St-Georges from Gouges is a classic, with blackberry and cassis fruit and a strong savoury, almost animal note and hints of earth, smoke and leather. The texture is firm and tannic, with lots of extract and impressive length. The grapes come from the domaine’s 1.1-hectare parcel. They are destemmed and fermented on native yeasts with a submerged cap for two weeks before ageing over two winters in cask. This wine should age well indeed.
