The 2012 Le Domaine d'Henri Chablis 1er Cru Fourchaume Heritage is a mature Chardonnay from northern Burgundy, showing lemon, ripe pear and white peach with dried flowers, honeyed citrus, hazelnut and developed mineral notes.
On the palate, it is textured and layered, with fresh acidity carrying mature orchard fruit, citrus and subtle nutty and savoury characters. Bottle age adds depth and complexity, leading to a long, dry and persistent mineral finish.
Ben’s Recommendation:
At Wine More Cellars, this Heritage release is an excellent choice for Chardonnay drinkers who appreciate mature Premier Cru Chablis with developed complexity. Enjoy now or over the next 4–6 years. Serve lightly chilled with seared scallops, roast chicken with morels, grilled turbot or Comté soufflé.
