Motley Cru Prosecco NV - Grapes were sourced from a selection of high altitude, cool climate vineyards in the King Valley. The fruit was picked in the cool of the night, gently pressed and cold settled. Juice was racked clean and inoculated for a cool ferment at 16 deg. Once fermented the base wine was racked and sulphured immediately to retain freshness before blending and undergo carbonation and sucrose adjustments.
