Symons Wines is a boutique wine producer founded in 2023 by acclaimed winemaker Mike Symons, based in the Mornington Peninsula — a cool-climate region in Victoria, Australia known for elegant Pinot Noir and Chardonnay. 

Mike has deep roots in the region’s wine scene, having spent 18 years at Stonier, one of Mornington’s pioneering wineries, before launching his own label focused on site-expressive, minimal-intervention wines. His philosophy emphasises careful vineyard work and restrained use of oak, allowing the character of the fruit and terroir to shine through in the finished wines. 

Symons’ portfolio includes standout Pinot Noirs — such as those from the prized Georgica Vineyard — and a refined Chardonnay sourced from older Merricks vineyards, each reflecting the region’s maritime influence, bright acidity and nuanced aromatics. The wines often combine savoury structure with fruit purity, embodying the cool-climate elegance for which Mornington Peninsula is celebrated.
