Sandhi sources fruit from some of the most prestigious vineyards in Sta. Rita Hills, including Sanford & Benedict, Bentrock, Rinconada, La Rinconada, and Peake Ranch. Located just a few kilometres from the Pacific Ocean, the region is shaped by strong maritime influences, cool afternoon winds, and one of California's longest growing seasons. Ancient marine soils, limestone, and diatomaceous earth contribute remarkable minerality, tension, and freshness, allowing Chardonnay and Pinot Noir to ripen slowly while retaining vibrant acidity.

Winemaking follows a meticulous minimal-intervention philosophy inspired by the great wines of Burgundy. Grapes are harvested by hand, fermented using indigenous yeasts, and handled gently throughout the winemaking process. Chardonnay is barrel fermented and aged on lees with restrained use of French oak, while Pinot Noir undergoes careful extraction to preserve purity and site expression. The focus is always on transparency, freshness, and longevity rather than power or excessive ripeness.
