The 2021 Seville Estate Dr McMahon Pinot Noir is a flagship Yarra Valley Pinot Noir produced from the estate’s original 1972 plantings, honouring founder Dr Peter McMahon and the historic vineyard that helped re-establish the Yarra Valley as a premium wine region. Crafted using 100% whole bunch fermentation and matured in new French oak, the wine combines concentration, savoury complexity and fine structural detail with remarkable elegance and precision.
On the palate, it is light to medium-bodied with silky tannins and vibrant acidity, delivering flavours of wild strawberry, dark cherry and raspberry layered with peony, spice, dried herbs and subtle tobacco leaf notes. The whole bunch influence adds aromatic lift and savoury texture, while carefully integrated oak supports a long, structured finish with exceptional depth and mineral detail. Despite its intensity, the wine retains freshness and finesse throughout.
