GUNDOG ESTATE
Gundog Estate is a boutique, family-owned Australian wine producer founded by winemaker Matt Burton in 2011, specialising in expressive wines from some of New South Wales' most important regions. Rather than concentrating on a single vineyard or appellation, Gundog works across the Hunter Valley, Canberra District and Hilltops, matching individual grape varieties with the regions and vineyards best suited to them.
At the heart of Gundog Estate are three varieties: Semillon, Riesling and Shiraz. Together they allow Matt Burton to explore dramatically different expressions of New South Wales terroir—from the uniquely delicate, long-lived Semillon of the Hunter Valley to the vibrant Riesling and cool-climate Shiraz of the Canberra District.
The Hunter Valley forms an essential part of Gundog's identity. Despite its warm, humid and relatively wet growing conditions, the region has developed one of Australia's most distinctive wine styles in Hunter Valley Semillon. Grapes are harvested relatively early, preserving high natural acidity and producing wines that can be remarkably light and restrained in youth before developing extraordinary complexity with bottle age.
Gundog sources its Hunter Valley Semillon and Shiraz from several carefully selected vineyards in the Lower Hunter, including the Vernon Vineyard in Mount View and Somerset, Tinklers and Will's Hill vineyards in Pokolbin. The different soils, aspects and microclimates of these sites provide Matt with the opportunity to produce both regional blends and more detailed vineyard expressions.
Semillon has consequently become one of Gundog Estate's signature wines. In the classic Hunter tradition, the emphasis is on freshness, purity and natural acidity rather than richness or obvious oak influence. Young examples can show citrus, green apple and subtle herbal notes, while bottle maturation can gradually reveal the toast, honey and lanolin complexity for which aged Hunter Semillon is famous.
The Canberra District provides a dramatically different environment. Officially recognised as a Geographic Indication in 1998, the region has a cool continental climate characterised by cold winters, relatively low rainfall and substantial temperature variation throughout the growing season.
Gundog's principal sources of Canberra Shiraz are vineyards around Murrumbateman, while Riesling is grown on Gundog Estate's own vineyard. The region's loamy clay soils over ancient geological formations and its cool continental conditions provide an excellent environment for wines combining aromatic intensity with natural freshness.
Canberra District Riesling is therefore another cornerstone of the portfolio. The variety thrives in the region's cool conditions, producing wines built around citrus, floral aromatics and bright acidity. Gundog's approach emphasises precision and regional character, creating Riesling that can be immediately refreshing while retaining the structure required for bottle development.
Canberra also provides some of Gundog's most compelling Shiraz. Rather than the dense, powerful style associated with warmer Australian regions, cool-climate Canberra Shiraz can display red and dark berries, pepper, spice and floral aromatics within a more medium-bodied framework.
The third major region in the Gundog story is Hilltops, situated in south-western New South Wales at an average elevation of approximately 540 metres. Gundog works with leading growers in the region, including vineyards associated with Freeman, Moppity and Boorowa, sourcing fruit that combines impressive flavour concentration with fine tannin and freshness.
Across these regions, Gundog's philosophy is fundamentally about allowing variety, place and season to remain visible in the finished wine. Matt Burton favours wines that are bright, detailed and balanced, with enough structure to be serious but enough freshness and drinkability to remain enjoyable at the table.
This philosophy is expressed through several distinct ranges. The core Gundog Estate collection focuses on regional classics including Hunter Valley Semillon, Riesling and Shiraz from the Hunter, Canberra and Hilltops.
Alongside it sits Indomitus, Gundog's more experimental small-batch collection. These wines allow Matt greater freedom to explore techniques such as wild fermentation, skin contact and textural winemaking, while still maintaining a connection to vineyard and variety.
At the top of the creative hierarchy is M BURTON, Matt's most personal and limited-production label. These wines provide a space for rare releases and more complex projects that sit outside the conventional frameworks of the core Gundog Estate portfolio.
Gundog is also connected to Burton McMahon, a collaboration focused on elegant Yarra Valley Chardonnay and Pinot Noir. Together, these different projects demonstrate the breadth of Matt Burton's approach, ranging from classic Australian regional styles to more exploratory contemporary winemaking.
Environmental and social sustainability have become equally important to the identity of Gundog Estate. The business has maintained carbon neutrality for six consecutive years, combining emissions reduction with offsets for emissions it cannot yet eliminate. Gundog is careful to note that it does not describe itself as third-party certified carbon neutral, reflecting a deliberately transparent approach to its environmental claims.
Practical initiatives have included renewable energy, lighter-weight packaging, LED lighting, improved waste management and reduced energy consumption. At the Gundaroo vineyard, the team has also continued moving toward more sustainable farming practices with an emphasis on long-term soil health and environmental resilience.
Since 2018, Gundog Estate has partnered with 15 Trees, helping fund the planting of more than 3,700 native trees and shrubs through community-led revegetation projects around Australia. These projects support biodiversity, wildlife corridors, soil restoration and broader landscape regeneration.
Social responsibility is another important component of the business. Gundog has partnered with Path2Change, an organisation supporting disadvantaged and homeless young people, with the winery contributing through fundraising as well as opportunities for work experience, training and mentoring.
This combination of regional focus and broader social responsibility makes Gundog Estate a distinctive contemporary Australian producer. The wines remain the central focus, but the business has been designed around the idea that a successful winery can simultaneously support its growers, employees, communities and environment.
