HEIWA

Heiwa Shuzō is a distinguished sake brewery situated in Kainan City, Wakayama Prefecture, Japan. Established in 1928, the name “Heiwa,” meaning “peace,” was adopted post-World War II to symbolize the joy of resuming sake production in peaceful times

Built on the grounds of a former temple that stood for over 500 years, Heiwa Shuzō is nestled in a valley surrounded by mountains, benefiting from abundant soft spring water—ideal for sake brewing . The brewery emphasizes traditional methods, with much of the work done by hand, and cultivates its own sake rice, Nanko plums, and yuzu fruit.

Its yuzu-infused sake combines one-year-old Junmai Sake with yuzu juice in a 1:1 ratio, higher than typical Yuzushu. The yuzu, sourced from Wakayama, is juiced with its peel, imparting sweet, sour, and bitter notes. The result is a vibrant, citrus-forward liqueur with a fresh finish .
